Ingredients

- •3 tablespoons Thai red curry paste
- •1 medium Onion, sliced
- •2 medium (mixed colors) Bell peppers, sliced
- •2 medium Carrots, sliced
- •2 cups Broccoli florets
- •2 cans (13.5 oz each) Coconut milk
- •1 cup (240ml) Vegetable broth
- •2 tablespoons Fish sauce
- •1 tablespoon Brown sugar
- •2 tablespoons Lime juice
- •1/2 cup Fresh basil leaves
- •1 cup Bamboo shoots (optional)
- •300g Tofu or chicken (optional)
- •1/4 cup Fresh cilantro for garnish
Instructions

Heat coconut oil in a large pot or wok over medium-high heat.

Add Thai red curry paste and stir-fry for 1-2 minutes until fragrant and the oil turns red.

Add sliced onions and cook for 2-3 minutes until they start to soften.

If using protein (tofu or chicken), add it now and cook until lightly browned, about 5 minutes.

Add sliced bell peppers, carrots, and broccoli florets. Stir-fry for 3-4 minutes.

Pour in coconut milk and vegetable broth. Stir well to combine with the curry paste.

Add fish sauce and brown sugar. Stir until sugar dissolves.

Bring the curry to a gentle simmer and cook for 10-15 minutes until vegetables are tender but still crisp.

If using bamboo shoots, add them during the last 5 minutes of cooking.

Stir in fresh lime juice and half of the basil leaves.
