  • 2 cups (from 3-4 ears) Fresh corn kernels
  • 3/4 cup (95g) All-purpose flour
  • 2 large Eggs
  • 1/4 cup (60ml) Milk
  • 3 stalks Green onions, chopped
  • 1/4 cup Red bell pepper, finely diced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon Garlic powder
  • 1/2 cup Vegetable oil for frying

    If using fresh corn, cut kernels from the cobs. You can also use thawed frozen corn, but fresh is best.

    In a large bowl, whisk together eggs and milk until well combined.

    Add flour, baking powder, salt, black pepper, paprika, and garlic powder. Mix until smooth.

    Fold in corn kernels, chopped green onions, diced red bell pepper, and fresh parsley. Mix until evenly distributed.

    The batter should be thick but scoopable. If too thick, add 1-2 tablespoons more milk.

    Let the batter rest for 5 minutes to allow the flour to hydrate.

    Heat about 1/4 inch of vegetable oil in a large skillet over medium heat until shimmering (about 350°F/175°C).

    Drop heaping tablespoons of batter into the hot oil, spacing them about 2 inches apart. Flatten slightly with the back of the spoon.
