The Word Zuppa is an Italian word whose meaning is Soup and Toscana refers to Tuscany region of Italy. Therefore the word Zuppa Toscana means that “Tuscan Soup” or “Tuscan Style Soup”. Traditionally, this soup is made up of with lots of veggies, beans, potatoes, olive oil and Tuscan Bread.
The American version though adds Italian sausages, heavy cream and garlic in addition to potatoes and kale. The American version is little bit heavy and and it can be taken as meal as well.
How To Make Zuppa Toscana soup
Take a large deep pan and add sausages in it. Sauté the sausages in the pan for about 3-4 minutes until sausages turns brown or dark in color. Use slotted spoon to transfer the sausages from pan to plate and set them aside.
Take the same out and add butter in it, Sauté onions in the pan over medium range of heat and cook until the onion becomes soft and tender. Add garlic and coo for 1 minute until fragrant. Add chicken broth, potatoes, water, salt and pepper and bring it to boil. Boil the potatoes until they become tender. Stir in kale and heavy cream in it. Add sausages and taste it. If you feel that soup is less in spics than add more salt and pepper.
Serve the soup by garnish cheese if you like it.
Servings Of Zuppa Toscana soup
You can add any other vegetables in the soup or you can add them as toppings in the soup. If you do not like spices in the soup than you can serve jalapeno in separate with soup instead of adding them in the soup. If you want to make vegan soup than do not add chicken in it. Instead of chicken add some fresh vegetables in it. You can serve the soup with green onions, baked tortilla chips, plain Greek yogurt, salsa, hot sauce, or black olives

- 1 pound spicy Italian sausage
- 4 tablespoons butter
- 1/2 white onion
- 1 tablespoon garlic
- 6 cups chicken broth
- 2 cups water
- 4/5 yellow potatoes(cut the potatoes into 1-inch pieces)
- 3 teaspoons salt
- 1 teaspoon black pepper
- 2 cups heavy cream
- 4 cups chopped kale
