How To Cook Steak Gyro With Tzatziki Cucumber Sauce
Take a airtight plastic bag, Place steaks, olive oil, salt, black pepper, oregano, garlic and lemon juice in it. Shake the bag to mix the ingredients well with the steaks. Remove the air from the plastic bag and seal the bag. refrigerate it for about 4-8 hours. Cut the cucumber into thin slices and place these slices on paper towel. Sprinkle salt generously over the cucumber slices and set them aside for 5 minutes. Wrap the cucumber slices in papers towel and let the remaining liquid moves out. Transfer these drained cucumber slices into food processor or blender and blend them properly.
Add the remaining sauce ingredients like garlic, salt, black pepper, plain yogurt etc into the blender and pulse them until it becomes smooth and creamy in texture. Cover and chill it until it becomes ready to use. Preheat the grill or cast iron skillet pan to medium range heat. Use tongs to transfer the steaks from plastic bags to grill. You can use hands for transferring the steaks from plastic bag to skillet. Discard the excess marination liquid left in the plastic bag. Cook the steaks from one side for about 5-6 minutes and than cook the other side for more 5-6 minutes until it turns dark in color. The meat will turns pink from center when its cooked properly. Transfer the steaks to the cutting board with help of tongs. Allow the meat to rest for few minutes before slicing them into this grains.
Assemble gyros with lettuce, sliced onions, cucumbers and with steaks. Drizzle with tzatziki sauce. Top it with black pepper and fresh squeezed lemon. Serve immediately.

Ingredients
- 1 pound flank steak
- 1/3 cup olive oil
- 3 teaspoons garlic (minced Properly)
- 2 teaspoons dried oregano (you can use fresh oregano as well)
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- juice of 1/2 lemon
- 4 white or wheat pitas
- 1/2 red onion (slice into thin pieces)
- 1 tomato (slice into thin pieces)
- romaine lettuce
Tzatziki Sauce
- 1 medium cucumber, peeled and sliced
- 1/2 teaspoon salt
- 2 cups cold plain Greek yogurt
- 4 teaspoons garlic (minced Properly)
- 1/3 cup chopped dill (you can use fresh or frozen one, depends on availability)
- 1 and 1/2 tablespoons freshly squeezed lemon juice
- 1/8 teaspoon black pepper or according to your taste
Directions

Notes/Tips
- As TZATZIKI Sauce includes garlic in it that’s why it is better to use it in between 3 days due to health factors. It can be store by freezing it for long time and reuse it again.
- There is no too much salt in TZATZIKI Sauce so that’s why serve this sauce with well seasoned steaks.
- Normal and balsamic is too hard to use that’s why use mild vinegar.
