  • 1 tablespoon Fresh ginger, grated
  • 2 medium Carrots, julienned
  • 2 medium (mixed colors) Bell peppers, sliced
  • 2 cups Cabbage, shredded
  • 1 cup Bean sprouts
  • 1 cup Snow peas
  • 4 stalks Green onions, cut into 2-inch pieces
  • 1/4 cup (60ml) Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Sesame oil
  • 1 teaspoon Brown sugar
  • 1/4 teaspoon White pepper
  • 1 tablespoon Sesame seeds for garnish

Instructions

  1. 1

Cook chow mein noodles according to package directions. Drain and rinse with cold water to stop cooking. Toss with 1 tablespoon oil to prevent sticking. Set aside.

  2. 2

In a small bowl, mix together soy sauce, oyster sauce, sesame oil, brown sugar, and white pepper. Set aside.

  3. 3

Heat a large wok or skillet over high heat. Add 2 tablespoons vegetable oil and swirl to coat.

  4. 4

Add minced garlic and grated ginger. Stir-fry for 30 seconds until fragrant.

  5. 5

Add carrots and bell peppers. Stir-fry for 2-3 minutes until slightly softened but still crisp.

  6. 6

Add cabbage and snow peas. Continue stir-frying for 2 minutes.

  7. 7

Push vegetables to the side of the wok. Add the cooked noodles to the center.

  8. 8

Pour the sauce mixture over the noodles and toss everything together using tongs or chopsticks.

  9. 9

Stir-fry for 3-4 minutes, tossing constantly, until noodles are heated through and slightly crispy on the edges.

  10. 10

Add bean sprouts and green onions. Toss for 1 minute until just wilted.

  11. 11

Taste and adjust seasoning with more soy sauce if needed.

  12. 12

Remove from heat immediately to prevent overcooking.

  13. 13

Transfer to a serving platter and garnish with sesame seeds.

  14. 14

Serve hot as a main dish or side. Optional: Add protein like tofu, chicken, or shrimp. Store leftovers in the refrigerator for up to 2 days.
