Ingredients

  • 1.5 lbs (680g) Chicken thighs, boneless and cut into chunks
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 1 large Onion, diced
  • 4 cloves Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 2 tablespoons Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1/2 teaspoon Turmeric powder
  • 1 1/2 cups (300g) Long-grain white rice
  • 2 1/2 cups (600ml) Chicken broth
  • 1 cup (240ml) Coconut milk
  • 1 cup Frozen peas and carrots
  • 1/4 cup Fresh cilantro, chopped
  • as desired Lime wedges for serving

Instructions

    Season chicken chunks with salt and black pepper.

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat.

    Add chicken pieces and cook for 4-5 minutes until browned on all sides. Remove chicken and set aside.

    In the same pot, add diced onion and sauté for 3-4 minutes until softened and translucent.

    Add minced garlic and grated ginger. Cook for 1 minute until fragrant.

    Stir in curry powder, cumin, coriander, and turmeric. Cook for 30 seconds to toast the spices.

    Add rice to the pot and stir to coat with the spices and oil. Toast for 1-2 minutes.

    Pour in chicken broth and coconut milk. Stir well to combine.

    Return the browned chicken to the pot, nestling it into the rice mixture.

    Bring to a boil, then reduce heat to low. Cover with a tight-fitting lid.

    Simmer for 20-25 minutes until rice is tender and liquid is absorbed. Do not lift the lid during cooking.

    After 20 minutes, quickly add frozen peas and carrots on top. Cover and cook for 5 more minutes.
