- •6 cups Vegetable broth
- •1 can (14 oz) Diced tomatoes
- •1 teaspoon Dried thyme
- •1 teaspoon Dried oregano
- •1 Bay leaf
- •1 teaspoon (or to taste) Salt
- •1/2 teaspoon Black pepper
- •1/4 teaspoon (optional) Red pepper flakes
- •2 tablespoons Lemon juice
- •2 tablespoons Fresh parsley, chopped
Instructions

Heat olive oil in a large pot or Dutch oven over medium heat.

Add diced onion, carrots, and celery. Sauté for 5-7 minutes until vegetables are softened and onion is translucent.

Add dried thyme, oregano, salt, black pepper, and red pepper flakes if using. Stir to coat the vegetables with spices.
