If you want browned shrimp than you can sauté the shrimp in the start of recipe. Transfer it to the plate when cooked fully and cover them to keep it warm till the end.
If you want to add more spices in this recipe than add 1/2 spoon of chili flakes to black seasoning.
You can use any kind of skillet but I prefer you to use cast iron skillet pan which will giver awesome sear on your shrimp Cajun.
