Au Jus (from the French culinary canon, pronounced “oh-ZHOO”) is a very simple sauce and it is quick to prepare. This sauce is thinner than gravy and concentrated in flavor. It is prepare from meat juice along with stock. Au Jus recipe is best for roasted chicken and beef just like prime limb.
This Au Jus recipe assumes you have roasted chicken/beef in large quantity. The meat/Chicken juices and toasty bits left at the bottom of the roasting pan are important components of this recipe.
Take a skillet and place it over stovetop, Add beef fats in it and turn on the flame on medium range. Whisk flour in the beef fat and cook it for sometime until it thickens. Cook almost for 3 minutes with constant whisking. Pour the beef broth in the skillet, turn the flame on high range until the mixture starts boiling.
Boil the mixture until it thickens and add salt and pepper in it according to your taste.
This recipe can be use for roasted chicken, veal or lamb simple by substituting the appropriate stock for them.
Au Jus is a French word whose meaning is “With Juice”. It means that serving the meat along with the drippings produce while cooking meat. Normally Au Jus is describe as the beef broth dip serve with French Dip sandwiches.
The main difference between beef broth and the Au Jus sauce is that Au Jus is the drippings made when the beef/meat is cooking. While the Beef broth is added externally.
To thicken the Au Jus sauce add some flour in it. Take a lot of care while adding flour in the sauce. Stir constantly while adding the flour so that it may add raw taste in the sauce.
If you want to make this recipe gluten free than you can add corn starch instead of plain flour. Try o create a slurry with cold water and a small amount of the starch before pouring it in. This step will prevent clumping in the sauce.
You can freeze Au Jus to preserve it for late use. You can pour the left drippings in the ice cube tray and freeze it. When they freeze fully than shift it plastic bag. It can be freeze for couple of months.

2-Pour in the beef broth and whisk continuously. Continue cooking it on medium flame for about 2 minutes.
3- Add Worcestershire sauce and salt and black pepper in it according to your taste. Bring a boil and cook it for 5 minutes until slightly thickens. Serve with Prime limb and French sandwiches.
